Pepperoni Chicken ***


4 boneless,skinless chicken breasts

2 Cups Italian Bread Crumbs

1/2 Cup milk

3 types Cheese

1/2 Cup flour

1/4 Cup veg. oil

Thin slices of Pepperoni
(as much as you want)

1 Egg


*** This is a delicious twist on the classic Chicken Cordon Bleu

Lightly beat the egg in a shallow dish.

Place milk,flour and bread crumbs in separate shallow dishes.

Pound each chicken breast to a thickness of 1/4 inch.

Place a slice of each type of cheese and as much pepperoni as you like on each chicken breast and roll up.

Refrigerate chicken for at least 30 min.

Dip the chicken first in the milk,then the flour,then the egg and finally in the bread crumbs.

Heat the oil in a skillet and gently brown the chicken on all sides.

Use cooking spray or some oil from the skillet to coat a baking dish.

Place chicken, sean side down, in the dish, covering it with more pepperoni and cheese (as much as you want).

Bake in a 350 deg oven for approx 30 min or til chicken is done.

Serve hot as a main dish or chill,slice and serve as appetizers at your next party.
