Chicken Royale


4 boneless chicken breasts

2 cups seasoned bread crumbs

2 tbsp onion-chopped very fine

1/2 tsp salt

Pinch pepper

1/4 tsp poultry seasoning

10 tbsp butter-melted

1/2 cup hot water

1 tbsp parsley-minced

1/2 cup flour

1/2 tsp paprika

1/2 lb fresh mushrooms-sliced

1/4 cup onion-sliced

2 tbsp butter

2 tbsp flour

1/2 tsp salt

1/2 tsp pepper

1/2 cup heavy cream

1/2 cup sour cream


For the chicken

Pound each chicken breat to a uniform thickness.

In a bowl,combine the bead crumbs,onion,salt,pepper,poultry seasoning,2 tbsp of the melted butter,water and parsley.

Divide the stuffing between the 4 chicken breasts and fold eaach in half,securing with toothpicks.

Combine the flour and the paprika and coat each piece of chicken.

Place skin side down in a greased baking dish and drizzle with the remaining butter.

Bake,uncovered,at 325 for 1-1 1/4 hours or til chicken is tender.

For the sauce

Saute the mushrooms and onion in the butter til tender.

Stir in the flour,salt and pepper.

Gradually add the heavy cream and cook til bubbly.

Stir and cook 1 minute more.

Reduce heat and stir in the sour cream.

Stir just til heated through,DO NO BOIL.

Serve over chicken.
