Chicken with Crunchy Vegetables
Ingredients
3/4 lb chicken-cut in small pieces
1/4 cup shoyu(soy sauce)
1 tsp sesame oil
1 cup celery-sliced very small
3/4 cup carrots-sliced very small
1 clove garlic-crushed
1 cup red cabbage-shredded
8 oz water chestnuts-sliced
Directions
Mix the chicken pieces with 1 tbsp of the shoyu and marinate for 10 minutes.
Heat the sesame oil and saute the celery,carrots and garlic for 1 minute.
Stir in the cabbage and water chestnuts and cook for 2 minutes.
Remove the veggies from the pan and set aside.
Cook the chicken in the same pan til done.
Add the remaining shouy and cook,stirring, for 1 minute.
Return the veggies to the pan with the chicken and cook til heated through.
