Pepper Mushroom Chicken


2 chicken breast-lightly pounded

1 tbsp bread crumbs

1/2 tsp olive oil

1 cup fresh mushrooms-sliced

1/2 cup plus 3 tbsp chicken broth

1 red pepper-julienned

2 tsp lemon juice

1/4 tsp Italian seasoning

1/2 tsp salt

1/8 tsp crushed red pepper

1 clove garlic-minced

1 tsp cornstarch

2 tbsp parsley

cooking spray


Dredge the chicken in the bread crumbs.

Spray a skillet with the cooking spray and add the oilve oil.

Cook the chicken til tender and brown on both sides then remove from pan and set aside to keep warm.

Add the mushrooms,pepper and 1 tbsp of the chicken broth.

Saute for 3 minutes.

Add 1/2 cup of the broth,lemon juice,Italian seasoning,salt,crushed red pepper and garlic.

Bring to a boil,reduce heat and simmer for 10 minutes.

Mix the remaining 2 tbsp of broth with the cornstarch and add to the skillet.

Cook til mixture has thickened and then pour over chicken or add chicken back into the skillet til heated through.

Garnish with the parsley.
