Poppyseed Chicken


1 tbsp butter

8 oz fresh mushrooms-sliced

5 cup cooked chicken-cubed

1 can cream of chicken soup

8 oz sour cream

2 oz pimentos-drained and chopped fine

For the topping

1/2 cup butter-melted

1 1/3 cup crushed butter flavored crackers

2 tsp poppyseeds


Melt the buter in a large skillet and saute the mushrooms til tender.

Stir in the chicken,chiocken soup,sour cream and pimentos and mix well.

Transfer mixture to a greased casserole dish.

For the topping

Combine the melted butter with the crushed crackers and poppyseeds.

Sprinkle over the chicken mixture and bake at 350 for 20 minutes.
