Sweet and Sour Chicken


1 can pineapple chunks (20 oz)

1/3 cup water

3 Tbsp vinegar

1 Tbsp soy sauce

1/2 cup packed brown sugar

3 Tbsp cornstarch

5 chicken boneless breasts-

1 large green pepper-cut in 1" pieces

2 cups flour

1 Tsp salt

1 Tsp pepper


Combine flour,salt and pepper.

Dredge chicken breasts and lightly brown in a large, hot skillet with small amount of oil.

Drain on paper towels.

Remove oil from skillet

Drain pineapple,reserving juice and set aside.

If needed, add enough water to the pineapple juice to make 1 cup of liquid and pour into the pan.

Add the 1/3 cup water,vinegar,soy sauce,brown sugar and cornstarch, stirring til smooth.

Cook over medium heat until thick, stirring constantly.

Add pineapple,chicken and green pepper.

Continue cooking on low heat for 45 min or until chicken is done.

Serve over rice or pasta.
