Roasted Garlic Dressing


1 extra large garlic bulb(about 4 oz)

1/2 tsp salt

1/2 tsp pepper

2 tbsp lemon juice

1/4 cup olive oil

1 tbsp dijon style mustard

1/4 cup water


Preheat oven to 350.

Wrap garlic tightly in foil and bake for 1 hour.

Unwrap and when cool enough to handle,squeeze the pulp from each clove.

Place garlic in a blender with the salt,pepper,lemon uice,olive oil and mustard.

Blend til smooth.

With the feeding tube open,gradually add the water and continue to blend til thick and creamy.
