Strawberry Rhubarb Vinaigrette


1 cup chopped fresh rhubarb

1 1/4 cup chopped fresh strawberries

3 large shallots - coarsely chopped

1 Tbsp sugar

1/3 cup red wine vinegar

3/4 cup oil(canola,etc)

1/4 Tsp Dijon style mustard


In a stainless steel saucepan.combine the rhubarb with enough water to cover.

Simmer until rhubarb is tender(about 10 minues),then drain.

Mix rhubarb and strawberries in a blender and puree.

Strain the misxture then add in shallots,sugar and vinegar.

Whisk in the oil and mustard.

Chill before using.

Traditionally this is served over an arugula,strawberry and goat cheese salad.
