Chow Chow


Ingredients


4 cup cabbage-chopped

2 cup cauliflower-chopped

2 cup green tomatoes-chopped

2 cup onion-chopped

2 cup green pepper-chopped

1 cup red pepper-chopped

3 tbsp salt

2 1/2 cup vinegar

1 1/2 cup sugar

2 tsp celery seed

2 tsp dry mustard 1 tsp mustard seed

1 tsp tumeric

1/2 tsp ginger


Directions

Place all veggies in a large bowl and stir in the salt.

Let stand for 4-6 hours in a cool place and then drain.

Combine the vinegar,sugar,and spices in a large pan and simmer for 10 minutes.

Add in the veggies,cover and simmer for another 10 minutes.

Pack into oint or quart jars,leaving 1/4 inch head space.

Position lids and process for 10 minutes in boiling water bath.

Set jars out of a draft and wait for the "pop" to signify that they have sealed.
