Hollandaise


Ingredients


1/2 cup butter

1/2 Tbsp lemon juice

2 egg yolks

1/4 Tsp salt

1/3 cup hot water

dash paprika


Directions


Cream the butter.

Beat in the egg yolks one at a time.

Add in the seasonings and water, continuing to beat thoroughly.

Cook in top of double boiler,over hot water,stirring constantly, until thick and creamy.

Remove from heat and slowly add the lemon juuice,continuing to stir constantly.
