Sweet Pickles


150 tiny cucumbers

3 cups plus 2 Tbsp sugar

2 Tbsp mustard powder

1/4 cup mixed whole spices

1/3 cup plus 2 Tbsp salt

4 1/4 cup vinegar
white or apple cider

1 Tbsp peeled ginger root

very hot but not boilig water


In a large crock, sprinkle the cucumbers with the 1/3 cup salt.

Add enough of the hot water to cover the cucumbers and let this stand overnight.

Drain and then dry each cucumber.

Wipe out crock and place cucumbers back in it as they are dried.

Add 2 Tbsp each of sugar,salt,mustard to 1/4 cup vinegar to make a paste.

Combine the paste with the remaining 4 cups of vinegar.

Add in the ginger root and whole spices.

Add 1 cup of sugar daily for the next 3 days and stir gently.

After 5 days, taste check a pickle and if it is as swet as you want it,store pickles,along with the luquid, in the fridge.
