Basic White Sauce

1 cup milk

1 Tbsp butter - melted

1 Tbsp flour

1/2 Tsp salt

pepper to taste

Combine the butter and flour.

Slowly add the milk,stirring constantly.

Cook over low heat until thick and smooth (or in top of double boiler over hot,but not boiling, water).

This makes a thin white sauce.

For a medium sauce, increase the butter and flour to 2 Tbsp and for a thick sauce, increase each to 3 Tbsp.

Use these sauces as a base and add other ingredients to make any type of sauce such as a cheese sauce.

To make a brown sauce, let butter and flour brown in a hot skillet before adding the milk and salt.
