Cream of Celery Soup


1 cup diced celery

3 Tbsp flour

1 Tbsp minced onion

1 cup boiling water

2 1/2 cups milk

3 Tbsp butter-melted

salt and pepper to taste


Simmer the celery in the boiling water until very tender.

Brown onion in the melted buter.

Add flour and mix until smooth.

Scald milk and slowly add to the onion/flour, stirring constantly.

Cook over hot water til smooth and thick.

Add the celery and water it was cooked in.

Season to taste with salt and pepper.

Use 1 cup carrots,corn or squash in place of celery.
Brown celery leaves with the onions.
Garnish with parsley, a dollop of sour cream,paprika or your favorite garnish.
