Lentil Soup


1 cup dried lentils

6 cups water

1 cup tomato sauce

1/2 Lb Italian sausage
or chopped ham

1 Tbsp oil

1 large carrot-diced

1 small onion-diced

2 stalks celery-diced

1 clove garlic-minced

1 Tsp dried oregano

1 bay leaf

1 Tsp dried basil

2 cups chopped cabbage or spinach

Salt and pepper to taste

1/2 cup small pasta-optional


Wash lentils and place in large pot with water and tomato sauce.

Bring to boil,lower heat to simmer.

If using sausage and it is in casings, remove and sauté in the oil while breaking up with spoon (If using chopped,cooked ham, set it aside).

Add carrot,celery and onion to pan with sausage and cook about 10 min or until softened(if not using sausage, cook the veggies in the oil).

Add the garlic and herbs after 8 minutes.

Add all ingredients to lentils, and simmer for 30 minutes.

If using pasta,add it and cook covered for 10 minutes more.
