1 large chopped onion

2 cups chopped cabbage

2 green peppers-chopped

2 cups chopped carrots

1 cup whole kernel corn

2 cups chopped yellow squash

1/2 lb hot Italian sausage

1 clove garlic- minced

1 Tbsp oil

1 cup tomato sauce

5 cups beef broth

1 can any white bean(do not drain)

1/2 Tsp oregano

1/2 Tsp basil

1/2 Tsp salt

1/4 Tsp pepper

1/3 cup small pasta of your choice

Grated parmesan


In a large pot,saute the sausage and garlic in the oil until meat is no longer pink.

Add vegetables and sauté about 5 minutes until vegetables begin to soften.

Stir in tomato sauce, broth, beans, and spices.

Simmer uncovered 15 minutes.

Sprinkle pasta over soup and simmer about 15 more minutes until the pasta is tender.

Serve hot and top with the grated parmesan.
