Pineapple Gazpacho


3 c. fresh pineapple
cut in small chunks - divided in half

2 med. cucumbers - peeled - seeded
chopped and divided in half

1 c. yellow bell pepper
chopped and divided in half

1/2 c. chopped onion - divided in half

1 c. pineapple jiuce

1 Tbsp. white vinegar

1 Tsp. finely diced jalapeno

2 Tbsp. sugar


Combine first half pineapple,cucumber, bell pepper and onion in bowl and set aside.

Combine remaining pineapple,cucumber,bell pepper, onion, pineapple juice, vinegar and jalapeno in blender or food processor and blend until smooth.

Stir into reserved pineapple mixture.

Stir in sugar.

Cover and refrigerate 2 hours or until chilled.

Garnish with sliced jalapenos if desired.
