Potato Cauliflower Soup
Ingredients
2 medium sized potatoes
1 small head of cauliflower
1 cup chicken broth
1 tbsp parsley
1/2 tsp savory leaves
1/2 tsp salt
1/4 tsp white pepper
2 cups milk
3/4 cup sour cream
Directions
Cut potatoes into small chunks and cauliflower into small florets.
Cook potatoes and cauliflower in the broth til tender.
Spoon out 1/3 of the cauliflower and set aside.
Add the parsley,savory leaves,salt and pepper to the remaining potatoes and cauliflower and simmer for 5 minutes.
Puree 1/3 of the soup at a time in the blender and return to the pot.
Stir in the milk and the reserved cauliflower and heat through.
Remove from heat and stir in the sour cream.
