Split Pea Soup


12 oz diced ham

1 large ham bone

1 lb split peas (yellow or green)

2 cups chopped onion

1 clove minced garlic

1 Tbsp oil

5 cups water

1 bay leaf

1 1/2 Tsp cumin

1 1/2 Tsp oregano

1/2 Tsp ground red pepper

1 cup diced carrot

1 cup diced celery

Salt and pepper to taste


Wash and drain the peas.

Saute the onion and garlic in the oil.

Place peas,ham bone,water,onion/garlic mixture,herbs and spices in a large pot and bring to a boil.

Cover,reduce heat to a simmer and cook for 50-60 min.or until peas are soft.

Add the veggies and continue cooking at a simmer for another 25-30 min or until veggies are tender.

Remove the ham bone and bay leaf.

Puree half of the soup and reurn it to the pot.

Add the chopped ham and cook until ham it heated through
