Baked Eggplant


2 eggs - well beaten

1 medium eggplant

1/4 cup butter

1/2 cup bread crumbs
(plain or seasoned)

1 Tsp minced onion

salt and pepper to taste


Peel and slice eggplant.

Cook in salted water until tender then drain and mash.

Add butter,bread crumbs,onion and eggs.

Season with salt and pepper to taste.

Pour into well oiled baking dish and bake at 400 deg unti heated through and top has browned.
