Candied Squash


1 large acorn squash

1/4 cup butter

1/2 cup brown sugar

2 Tbsp water

2 Tbsp dark corn syrup

1/4 Tsp nutmeg


Boil the squash in a large pot of water for 15 min.

Remove from water and let it cool until easily handled.

Peel,split,remove seeds and cut in chunks.

Melt the butter in a heavy skillet.

Stir in the brown sugar,syrup,nutmeg and water.

Once the brown sugar is dissolved, add the squash and toss to coat.

Simmer,covered, for 10 min, uncover and continue at a simmer for another 5 min or until squash is tender.
