Caribbean Corn


3 cup whole kernel corn

1 clove garlic-minced

3 tbsp unsweetened pineapple juice

3 tbsp milk

1 1/2 tsp shoyu(soy sauce)

1/2 tsp sugar

1/4 tsp cumin

1/4 tsp ground ginger

1/4 cup green onion-sliced

Cooking spray such as Pam,etc


Coat a large skillet with the spray and saute corn and garlic for 5 minutes.

Combine the pineapple juice,milk,shoyu,sugar,cumin and ginger.

Add to the corn,cover and simmer for 15 minutes,stirring occasionally.

Add in the green onion and cook an additional 5 minutes.
