Cheesy Mashed Potatoes


Ingredients


3 lb potatoes

2 cups grated cheese
cheddar,smoked gouda,
gruyere.swiss,etc

1/4 cup butter

8 oz sour cream

1 Tbsp chopped green onion

1/2 Tsp salt

1/4 Tsp pepper

paprika for garnish


Directions


Peel,then boil,potatoes in salted water until tender.

Drain well and mash.

Combine the cheese and butter with the potatoes and stir until the butter has melted.

Stir in the sour cream,green onion,salt and pepper.

Sprinkle with paprika before serving.

Variation-pour mixture(minus paprika) into a greased casserole dish.

Top with more grated cheese.

Bake at 325 for 45 min.

Sprinkle with paprika and serve.
