CRISPY ONION RINGS


Ingredients


2 large Vidalia or other sweet onions(1 1/2 pounds)

6 cup whole-wheat flake cereal( such as wheaties)-finely chopped

1 tbsp chili powder

2 tsp sugar

1 tsp ground cumin

1/4 tsp ground red pepper

1c egg substitute


Directions

Cut each onion into 4 thick slices and seperate into rings. Reserve small rings for another use.

Combine cereal,chili,powder,sugar,cumin and red pepper-stir well.

Place half of cereal mixture in a shallow dish or pie plate.

Set remaining half of mixture aside.

Beat egg substitute at high speed of a mixer until soft peaks form.

Dip half of onion rings in egg substitute then dredge in crumb mixture.

Place onion rings in a single layer on baking sheets coated with cooking spray.

Place remaining half of cereal mixture in shallow dish and repeat procedure with remaining onion rings & egg substitute.

Bake at 375 for 10 min or til crisp.
