Olive-Cheese Zucchini Boats


2 zucchini

1/2 cup water

1/4 tsp salt

2 tbsp butter

1/2 cup bread crumbs

4 tbsp stuffed olives-chopped

4 tbsp cheese-shredded


Cut the zucchini in half lengthwise,scoop out the pulp leaving 1/4 inch shells.

Place the shells,cut side down,in a skillet and add the water.

Bring to a boil,reduce heat,cover and simmer for 6 minutes or til tender.

Drain shells,turn right side up and sprinkle with the salt.

Chop the pulp and saute it in the butter for 5 minutes or til tender.

Stir in the breaad crumbs and olives.

Spoon the mixture into the shells and top each with the cheese.

Cover and cook over medium heat,with no added water, for 5 minutes or til cheese has melted.
