Potato Spinach Casserole


8 medium potatoes

1 cup sour cream

salt and pepper to taste

2 Tbsp chopped fresh chives
may use chopped green onion tops

1/4 cup butter

1 10oz pkg frozen spinach

1 cup grated cheese of choice


Thaw the spinach and drain well.

Peel and cook potatoes,then drain and mash.

Combine all the ingredients except for the cheese.

Mix well then pour into a greased casserole dish.

Bake,uncovered, at 400 deg for 15 min.

Sprinkle cheese over casserole and bake for an additional 5 min. or until cheese has melted and lightly browned.
