Sliced Baked Potatoes


4 medium sized potatoes

1 Tsp salt

3 Tbsp melted butter

3 Tbsp fresh chopped herbs of choice

3 Tsp dried herbs of choice

1/2 cup grated cheese of choice

1/4 cup grated parmesan


If potato skins are tough, peel them, otherwise just give them a good scrub.

Slice each potato into thin slices being careful not to cut all the way through.

Oven Method

Place potatoes in a baking dish and lightly fan them out.

Sprinkle with salt,drizzle with butter,then sprinkle on the fresh and dried herbs.

Bake at 425 deg for 50 min. then sprinkle with cheeses and continue baking for another 10-15 min or until cheese has melted and potatoes are lightly browned.

Microwave Method

Place potatoes in a microwave safe dish and lightly fan them out.

Drizzle with melted butter and the fresh and dried herbs.

Microwave on high for 10 min. rearrainging potatoes after 5 min if you do not have a rotating base plate.

Let potatoes rest for 5 min. after the 10 min baking period.

Top each potato with the cheeses and microwave for another 4-6 min. until the cheeses are melted.

Sprinkle with salt as soon as you removed them from the microwave.
