Sweet Potato Fritters
Ingredients
2 cup mashed sweet potatoes
1/2 cup flour
1/2 Tsp salt
1 Tsp baking powder
4 Tsp butter-melted
2 eggs - separated
1 cup milk
1 Tbsp sugar
oil for frying
Directions
Sift the flour,remeasure and sift again with the baking powder and salt.
Combine the sweet potatoes,butter,sugar,milk and egg yolks, beating until smooth.
Add flour to potato mixture.
Beat egg whites to stiff peaks and fold in to potato mixture.
Drop by spoonfuls into hot oil and cook til golden.
