Make Your Own Pastrami
Ingredients
3-4 lb corned beef
trimmed of almost all fat
For the rub
5 Tbsp kosher salt
4 Tbsp paprika
3 Tbsp coriander seeds
3 Tbsp brown sugar
2 Tbsp black peppercorns
2 Tbsp yellow mustard seeds
1 Tbsp white peppercorns
8 cloves minced garlic
Directions
Rinse corned beef to remove most of brine.
Combine coriander seeds, peppercorns and mustard seeds in a spice grinder and do a "coarse grind".
Add in remaining ingredients and mix well.
Use as much of the rub as you like on the rinsed corned beef and let it sit in a sealed container in the fridge overnight.
Place meat in a smoker and smoke for 1 hour per pound of meat.
You can use any type wood you like in the smoker - experiment with different types.
