Big Soft Pretzels
Ingredients
1 1/4 cup flour
3/4 cup wheat flor
1 small pkg yeast
2 tbsp salad oil
1 tbsp sugar
1/4 tsp salt
1 cup warm water
6 tbsp baking soda
Coarse salt,poppy or caraway seeds
Directions
Mix together 1 cup flour,the wheat flour,yeast,salad oil,sugar,and salt.
Add the water and beat on medium speed for 2 minutes.
Add the remaining flour and mix well.
Turn dough out onto counter and knead til dough is no longer sticky,adding small amounts of flour as needed,
Knead 2-3 minutes more and then place dough in a greased bowl,turning to coat,and let rise for 1 hour.
Punch dough down and turn out onto lightly floured surface.
Divide dough into 12 portions and shape each into a ball.
Roll each ball into an 18 inch rope and form each into a pretzel shape.
Place pretzels onto a cookie sheet and let rise again.
Use a large(non-aluminum) pan and bring 6 cups of water and the 6 tbsp of baking soda to a simmer.
Gently lower 1 pretzel at a time into the water and simmer on each side for 10 seconds.
Place the pretzels 1 inch apart on greased cookie sheet and let dry slightly.
Sprinkle each with the coarse salt,poppy or caraway seeds.
Bake at 425 for about 12 minutes or til browned.
