Pumpkin Almond Bread
Ingredients
2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1 tsp salt
2 eggs-lightly beaten
1 1/4 cup pumpkin
1 cup sugar
1/2 cup evaporated milk
2 tbsp cooking oil
1/2 tsp almond extract
3/4 cup slivered almonds-toasted
Directions
Mix together the flour,baking powder,baking soda,pumpking pie spice and the salt.
Combine the eggs,pumpkin,sugar,evaporated milk,oil and almond extract.
Add the egg/pumpkin mixture to the dry ingredients and mix well.
Stir in 1/2 cup of the toasted almonds.
Pour into greased 9x5 inch loaf pan.
Sprinkle remaining almonds over the top.
Bake at 350 for 60-65 minutes or til tests tone with a toothpick.
