Sponge Starter
Ingredients
1 cup lukewarm water
1/2 to 1 cake of dry yeast
(1/2 to 1 pkg of active dry yeast-not rapid rise)
Flour
Directions
Mix the yeast and water together and let stand for 20 min.
Add enough flour to make a stiff drop batter.
Beat until smooth then cover and let sit in a warm place overnight until light and bubbly.
Use as a base similar to sour dough starter.
