Pork and Noodle Casserole
Ingredients
4 pork chops-fat trimmed
10 oz frozen peas
1 cup onion-sliced
1 cup red pepper-sliced
29 oz chicken broth
8 oz noodles
3 tsp oilve oil
For the marinade
3 tbsp shoyu(soy sauce)
2 tbsp water
2 tbsp fresh ginger-grated
2 cloves garlic-minced
1/4 tsp pepper
Directions
Mix together the shoyu,water,ginger,garlic,pepper and 1 tsp of the olive oil.
Marinate the chops for 15 minutes,turning to coat well.
Drain the chops and reserve the liquid.
Heat the remaining 2 tsp olive oil and cook chops.
Remove the chops and set aside.
Add the onion and red pepper and lightly saute.
Stir in the broth and reserved marinade.
Bring to a boil then reduce heat and simmer for 7-8 minutes.
Pour into a casserole dish,stir in noodles and peas.
Place chops over the top.
Cover and bake at 375 for 20-25 minutes or til pasta and chops are done.
