Pork Roast with Lemon Herbs
Ingredients
2 lb pork roast
3 Tbsp olive oil
3 Tbsp lemon juice
3 cloves garlic, crushed
2 Tsp Italian seasoning
Directions
Mix together the oil,lemon juice,garlic and seasoning.
Evenly coat the roast with the rub mixture.
Cover and refrigerate for about 1 hour.
Place roast in roasting pan and bake at 350 til juices run clear and desired doneness is achieved.
Let rest for 10 min. in a warm oven and then slice across the grain.
