Broccoli and Zucchini Saute
Ingredients
3 bunches broccoli
5 small zucchini
1 bunch green onions
28 Tsp cooking oil
2 1/4 Tsp salt
(adjust salt to taste)
2/3 cup water
1 Tsp dried basil
1 Tbsp shoyu
Crisp lettuce leaves
Directions
Cut broccoli into small florets,zucchini into 1/2 inch thick slices and green onion into 2 inch pieces.
In a large,heavy pot add 1/3 cup oil and the green onions.
Cook, stirring frequently, for about 3 min or until onion is tender.
Add the broccoli and 1 1/4 tsp salt,tossing until broccoli is covered with the oil.
Add the water,cover pot and continue cooking over med heat for approx. 5-8 min or until broccoli is tender-crisp.
Remove vegetables and liquid to a bowl.
In the same pot, add the remaining 1/4 cup oil,1 Tsp salt and the basil.
Cook over med heat,stirring occasionally, until zucchini is tender-crisp.
Return the broccoli mixture to the pot,add the shoyu and mix well.
Arrange lettuce leaves on a platter and top with zucchini/broccoli mixture.
This dish may be served hot or cold.
