Latkes
Ingredients
6 to 8 potatoes - finely grated
Salt and pepper to taste
1 Tsp baking powder
1 onion - diced or grated
Flour - if needed
Vegetable oil for frying
Directions
Mix all ingredients with a wooden spoon in a large bowel.
Add small amounts of flour, if needed to bind ingredients
together.
Heat a generous amount of vegetable oil in a pan.
Make patties of potato mixture and fry until golden brown.
Drain on paper towels.
