Mashed Potato Pancakes
Ingredients
1 1/2 lb potatoes
3 Tbsp butter
2/3 cup finely chopped onion
1 egg
1 Tsp salt
1/4 Tsp pepper
3 Tbsp flour
Directions
Peel,quarter, and cook potatoes in salted water.
Drain potatoes, mash and spread on a foil lined cookie sheet.
Refirgerate potatoes for at least 10 min. to cool.
Saute onion in 1 Tbsp of the butter until it is tender.
Place the cooled potatoes in a bowl and add the sauteed onion,egg,salt and pepper.
Beat all together until smooth.
Divide mixture into 8 equal patties and dip in the flour.
Add the remaining 2 Tbsp. butter to the skillet where onions were sauteed.
Cook patties in the melted butter until golden brown.
